There are so many balsamic vinegars on the market these days that frankly I wonder about the claims of authenticity and aging. Most are pleasant enough, but this Fiore is truly AMAZING. It is noticeably thicker, denser, sweeter than the popular, readily-available balsamic vinegars. A real fireworks display on the tongue, and it is sufficient to use it sparingly--just a splash on grilled peaches, or a dash on warm asparagus with good olive oil and sea salt. I think this product is worth every penny! I am going to restock and also order one for a birthday gift for someone special. I haven't tried the flavored ones; I prefer things in their original simple glory.
