I was feeling nostalgic and wanted some headcheese like I used to have available when I was a little kid. Growing up in a traditional german family we used to get a wonderful headcheese from our local butcher. Of course as time goes by the butcher is gone and the stuff that they sell in the local grocery store was more gelatin than meet and lacked flavor. This has a lot of meat in it, and the surrounding gelatin is flavored perfectly. I would recommend this to anyone who wants a good traditional headcheese like it used to be made in the 60's and early 70's.I AM A HEADCHEESE OFFICIANADO, WITH A GERMAN/HUNGARIAN HERITAGE, AND I'VE EATEN HOMEMADE, SOUR, HEAVY GARLIC, OVER-DOSE OF GELITAN, ONES WITH HARDBOILED EGGS ETC. BUT THIS HEADCHEESE IS ARGUBLY AND BY FAR THEE BEST I'VE EVER HAD,..AND AS I MENTIONED, AN EXPERIENCED HEADCHEESE MAN. IF THE RATING ABOVE HAD TEN STARS,..IT'D GET 10 STARS.Saag's Headcheese is the most German I have had since I left Germany! It has the right amount of spicing, aspic and textured meat pieces to make it great; it isn't greasy or under flavored. I purchased the 5# order and it lasts and lasts in the fridge with minimal wrapping or fuss. I have even frozen this product and it thawed just fine. This Headcheese is five star.
