Coastal Red (Vintner's Reserve)

Coastal RedThe Coastal Red wine kit from Winexpert produces an excellent wine at a reasonable cost. Retailing at under $70, it yields approximately 30 750ML bottles, which works out to less than $2.50 per bottle. The finished product is a wine that would retail at several times that amount. The Coastal Red is very similar to a French burgundy. While it can be consumed shortly after bottling, some of its more subtle overtones come out only after several months. I would suggest letting it age at least six months to get the full benefit of the fruity flavors that develop over time.

I have been making wine from kits for more than six years now, and I almost always make a kit put out by Winexpert. I do this because the instructions are easy to follow and explicit. Also, making the wine is a breeze. Generally speaking, the total time I spend from the initial mixing to bottling is somewhere between three and four hours (and this includes sanitizing the equipment and cleanup). The process takes somewhere between six and eight weeks (depending on the wine) until the wine is ready to bottle. So, once you purchase a kit it won't be all that long before you'll be enjoying excellent homemade wine.

Ok, I have fallen into the very addictive hobby of wine-making. Sure, why not? I mean I drink enough wine, why not make my own? One thing I have to say, the hardest part about making wine is having patience. Everything else is easy. Really easy.

This Coastal Red was the first kit I tried. I have done more than a few since then, many are still in the aging process, some are coming into their full flavor and those bottles seem to be getting emptied quickly. Which is why I have bought a few more kits and have those fermenting right now.

Most of these kits need at least 6 months of aging to really bring out the flavor and character. One year is even better. So basically you need to start a kit and then a few weeks later start another, etc. Do this so you have a few different kits bottled up and aging. Then before you know it 6 months has passed and you can start drinking the wine you made. If you like a really young wine, you can start drinking this after about a month in the bottle. But have patience, it gets even better.

One thing I have noticed is you really need to address the CO2 levels before you bottle this wine. Actually any kit wine. It needs to be vigorously stirred for about 2 minutes to release the CO2. Test it, then stir again if needed. I found I needed to stir it a number of times before it was perfect. Then I read an article about stirring it at the right temperature. 75 degrees is where you want to be. My homemade fermentation chamber is kept at 72 degrees. So I had to up the temp to 75 a day before I want to degas and found it degases much better. I have since stopped stirring to degas and now I use my brake bleeder to pull a vacuum on the carboy. That works much better! Not necessary, but if you have one, use it.

You only need to address the CO2 levels if you plan on bottling it per the instructions. The kits instructions have you bottling it within 6 weeks. If you decide to go the old school route, you can leave the wine in the carboy for 6 months, taste it, if its ready bottle it then. If not, give it a couple more months. By leaving it in the carboy for all those extra months the wine will naturally degas itself. But in today's society we like to rush, so we manually degas the wine, then bottle it and let it age. If it ages in the carboy then nature gets to degas it for us. I know I was in a rush to get the first couple of kits bottled. Now I just leave them in the carboy until it tastes the way I like it.

These kits are great because you can and should experiment with them. Want more body? Top it off to 5 or 5.5 gallons instead of 6. Like an oakey flavor? Add white oak blocks to the carboy while aging. Want even more kick? Add some sugar in the proper amounts to ferment to a higher alcohol level. This kit fermented to 14% for me, so that worked out just right in my opinion.

While I currently have a few kits going, I definitely see more in my future. I like the taste and it is truly cost effective. This kit makes 30 bottles of wine, so including the cost of the bottle that means you are spending about $3.50 a bottle. Then since you will reuse that bottle, the next batch will only cost you about $2.25 a bottle. Not too shabby.

After you do one or two of these kits, you will want to change things up. This kit makes 6 gallons of wine. After the primary fermentation was done, I split it up into two 3 gallon carboys. Added oak to one, left the other un-oaked. I am now aging them side by side and I can really taste the difference between the bottles. Its good without oak, but the other batch tastes really good too. Its almost like two different wines.

The next step is to start making homemade wines. I currently have some carrot wine fermenting. A blueberry-pomegranate. And a strawberry wine. Then I started to read more and decided I needed to make mead. So I have a few gallons of mead fermenting at the moment. There are plenty of books that detail the steps and also a number of winemaking forums so you can easily find the information you need.

Lalvin 71B-1122 YeastLalvin 71B-1122 is my yeast of choice for mead. It is delivering consistent, tasty results. I prefer my meads to be sweet and this yeast has never failed me. Other yeasts can give dryer results that are less desireable for meads (in my opinion).

One note of caution it does take a significant amount of time to finish. (I do not use yeast nutrients or energizers as I am brewing for a specific audience and prefer not to have modern ingredients in my mead.) That being said, I will continue to use it and be patient. Good mead is worth the wait!

This yeast works. It is the single most important item in my homemade wine recipes. It does the job. Nothing to whine about!

Chateau Classico 6 Week Wine Kit, Italian Dolcetto, 40-Pound BoxI bought this kit along with a Cab Style back in October. I bottled them January 2, 2010. So far the wine is aging nicely. It has started smoothing out considerably. With a couple of more months of aging I expect it to be a very drinkable wine. Considering that it is $40-50 less than other kits I have made, it holds up well against those kits. I bought this one not only for the price point, but also because it is one of the only Dolcetto kits available.

I was a little disappointed that no oak was included in this and the Cab kit.

All-in-all, one will not be disappointed with the results, and a little tinkering may make it even better.

Update 12/20/2011: I have subsequently made another Dolcetto, this time adding oak chips for a week after stabilizing and fining. This has really added some body to the wine and has improved the finished product immensely.

I added 1 pound frozen sweet cherries to must and allowed to ferment fully. After 2nd racking, allowed to bulk age with french oak for 6 months.

After bottling, allow at least 2 months aging in bottle before drinking.

Improves as it ages. Actually quite pleasant to dink!

I don't follow kit instructions: I do a 1-step fermentation in 6-gal glass carboy and then do my first racking; after approximately 30 days; I rack again and add oak sticks; I pitch all the additives that come with the kit and make wine the natural way.

I bake A LOT. Snickerdoodles, which require cream of tartar, (a.k.a. Angel Cream) are a friends-and-family favorite. The Pomegranate gives it a fair amount of acidity without too much of a tang. The bite overwhelms the finish as it fizzles away. The apple can be tasted, but acts more to tone down the pomegranate. It went very well with the lemon chicken we had, which was already pretty acidic. The Chicken was pretty light, yet still strongly acidic, and this Sparkler went well with it. It's sweet, but much dryer than any of the other sparkling juices we've had, and cleanses the palette much like the dealcoholized wines I've had. Less of a soda than other sparkling juices I've tried so far, with smaller bubbles. It's not flat, just finer. This doesn't have a head, while the others generally have a bit of one. This one also has continues tiny bubbles drifting upwards, where the others I've tried so far (Welch's Red and their White sparkling juices, as well as R.W. Knudsen's Sparkling Pear Juice and Martinelli's Sparkling Apple Grape) just have bubbles that are stagnant, attached to the side of the glass (in general.)

Did I like it: Yes, both my wife and I enjoyed it quite a bit. 9 out of 10.

My family & I adore sparkling juices. It was great to find one with more antioxidants than just grape or apple alone. I bought this once for a special family gathering. The next time I went to purchase it, the price had gone up higher than I was willing to pay. If it goes on sale again, I will buy.

We are a foodie family, and we love truffle salt.

We have a jar of this truffle salt and a jar of Casina Rossa Truffle and Salt by Nicola de Laurentiis 3.5 oz. in the cupboard at all times. We go through the Casina Rossa at a 4 to 1 pace, and only because I use the FungusAmongUs brand in heavier stews where it's indelicacies will not be noticed. I wouldn't even consider the brand for a finishing salt on tomatoes or mild cheeses.

If Casina Rossa is a well-mannered Persian housecat, FungusAmongUs is a burr-covered, hacking Maine Coon. I'd adopt both, but would love them differently.

I gave this to my dad for Xmas. He and my mom have been very pleased with the truffle flavor, BUT no method of packaging can contain the truffle odor, which is very strong and pungent. For a while it worked to keep the small jar shut up in a larger jar, but now they've had to move the larger jar to the downstairs pantry. I know people rejoice in the wonderful smell of truffles at the harvest, but no one wants to smell truffles all the time, especially when making rhubarb pie.

The flavor deserves 5 stars, and I would consider buying it again -but first I need to think of a way to store it!

My mom is not the biggest liquor drinker, so now she can make iced drinks with wine as the base rather than hard alcohol. Though other reviews state that they only received the drink pouches in a plastic bag, this was not the case for my purchase. I will update this review if we tinker with the recipes.

I bought these and yes they do come in plastic bags with a label on each but also included was a five sided box that you can fold together that has a picture of each flavor, one on each side. It makes a cute little colorful box, nice to give as a gift if you put it together.

Zinfandel Vinegar 6.8 ozO Zinfandel Vinegar is among the 13 specialty wine vinegars made by the California-based O Olive Oil company. I'm not a big vinegar fan, as vinegar in any but the smallest of doses makes me sick. But I keep some on hand to use sparingly in salad dressings. I tried O Zinfandel red wine vinegar a few years ago after it had placed first in America's Test Kitchen's Gourmet Red Wine Vinegar taste test. I've also seen Jacques Pepin use it on his cooking shows. It's a sweet vinegar, which Americans tend to prefer, very different from harsh super-acidic European vinegars. This is vinegar, though, so it's not sweet in the syrupy sense. It has a sharp, well-balanced flavor that is unusually rich by vinegar standards, with hints of cherry. This is how O Olive Oil describes it:

"Handmade in small batches in the Orleans method and aged in oak barrels for over two years. Smoky spice and voluptuous cherry notes emerge from old vine California grapes in this artisan vinegar."

The description of the flavor is about right, but it needn't be as pretentious as it sounds. Use O Zinfandel in anything that calls for red wine vinegar, or just drizzle it on greens or vegetables. It's especially good in dishes that contain onions, as it balances out the sharpness. In case you're wondering, the Orleans method of making vinegar was the first commercial method developed. A small amount of vinegar containing the mother bacteria is added to a cask of red wine. After a few months, the vinegar is moved to another barrel for aging. O Zinfandel is aged in oak barrels for 2 years, at which point bing cherry juice is added, before aging another 6 months. Ingredients are: aged zinfandel vinegar and bing cherries. Acidity is 6%, and it contains sulfites.

the quality of this vinegar is great, however you can buy the same box of Bakers and Chefs vinegar at Sam's club for $4... NOT worth $20 EVER!!!

Really pricey. I think a 45-gallon barrel is that much at the warehouse. I first cancelled, they did not respond so I went ahead and accepted. Certainly not economical.

Savora 11 Spice French Condiment from AmoraI had never heard of this so I bought it because I like new stuff. It is a great sandwich spread; a bit spicy, but still smooth. I've been using it instead of Mayo and it works just fine. I'll try it on fish sometime as it seems to me to be sort of like a spicy tarter sauce. I like it and it is now a regular item in my pantry.

More on the sweet side. I do prefer AMORA dijon. That is the best. This is good though. Try it!

This has been my favorite mustard for the past 20 years. There simply is nothing like this product. It is outstanding on hamburgers, steaks, sandwiches...

There is a hint of mustard heat, but this is not a Dijon style mustard. Those 11 herbs blend together to soften and make the mustard much more complex. There's no sharp vinegar flavor like with prepared mustards (better known as French's).

It is simply heaven with a really nice steak. I love this product, only wish it came in much larger jars.

We weighed it on a scale and it was 2.5 lbs. including the basket. The basket itself is 0.75 lbs, so there is only 1.75 lbs. of chocolate. The fudge is only too small pieces, and the non-pareils were not in a box so the sprinkles had all come off. I think the packing material weighed more than the basket itself. It came in a 2'x3' box that my 3 year-old is enjoying. The basket is 1.5'x1' and the rest is packing material. There has to be a better deal out there!!!

Firstly, we did not buy this. We received it as a gift from our daughter. The appearance of the basket is first rate but the positives end there. Except for the few Ghirardelli squares and the truffle cookies, all of the rest of the items could be found on sale in a dollar store. The chocolate was waxy and smelled funny, like chemicals. This was not worth the money. I think that the Gharardelli was placed prominently just to give the impression that the basket had quality ingredients. There was a large amount of packing material including 4 big cell plastic packing material and a big wad of paper. The chocolate items were laying in a single layer on top of the packing paper. This is a cheap excuse for a gift and anyone you give it to will be insulted by your choice.

Nice presentation but tiny portions! The chocolate chip cookies tasted like stale shortbread cookies with tiny chips blah! Nothing tasted fresh. Not worth the price. Will warn the gift giver not to purchase again.

I sent this basket to my friend and she raved about it for days! She's a chocoholic and loved the variety of chocolate items.
