Yes, many search for a substitute for Dessaux Fils Vinegar, out of business for years, once Julia Childs' only vinegar, with a perfectly aged and balanced flavor and virtually zero vinegar edge. After losing Dessaux Fils vinegar on the market here in the New York region, I searched for several years for a replacement. The Roland works despite its expense, but it is worth every penny, if you want an authentic French vinaigre. Stuff it full of fresh tarragon and pour away.
