This is the first kit I ever made.. Actually, the first WINE I EVER MADE!!!!!
I have to say that I didn't have great expectations... More of an experiment....
I am suprised how good it tastes...
I did make it 5 gallons, instead of six. Also, I picked up so sparkolid as a clarifier, since there is some concern for shell fish allergies, and the use of chitosan.
Other than that, I am very happy with the result. It has been in the carboy for 4 months.
I also made some Sangria with this wine... Came great!!!!! Looking forward to drinking a lot of this, this summer....
In a nutshell, for anyone starting out.... You will need equipment. The equipment, you can use over and over again. I made a video series on making these kits on YouTube. If you want to see the process, search for Sicilian Prince and Vino Italiano, and you should find my videos. Seeing the process and how simple it is will help you to see that you can do this yourself easily.
If you want to go the least expensive route, buy two of the Paklab 6 gallon carboys here on amazon for under 28 dollars each and this wine kit together, to get free shipping. You will also need a stopper and air-lock, some metabisulphite and cleanser ( I used b-brite ). Also, some tubing to siphon from one carboy to the other. A carboy brush will also be helpful.
Make it in one carboy but only do 5 gallons, which translates to 25 bottles of finished wine.... Transfer it to the other when racking.
Now, after you do this once... You will be hooked... So, your next step is get a starter kit, which will come with a carboy, now you will have three, meaning you will be able to brew 3 different types of wine at the same time. ( I currently have 4 going... )
Your problem now becomes, where are you going to put all of this wine?

I Made Whole Wheat Penne Pasta with Sausages Chopped Bell Peppers Onions Parsley Garlic and a couple Jalapeno Chiles (no seeds or white ribs) a little Tomato sauce to the Sofrito not too much maybe 3 Tablespoons and mix it all up with the Pasta and 3 Different Cheeses, Shredded Mozzarela, Low Fat Cottage Cheese and The King Of Cheeses Parmigiano Reggiano, with Homemade Bread crumbs ( I didn't have any, I had to make my own) with Extra Virgin Olive Oil and More Grated Parmigiano Reggiano, mix it all together and Sprinkle over the top to create a Crusty Brown and Crispy Topping, and in the Oven it Goes.
I Spend an Hour Creating this Masterpiece, Wow!... was that ever Good! I made enough for the four of us. My Family though I had Lost it, However, They Loved Dinner! I Like to Grate Parmigiano Reggiano over Pasta Dishes obviously and also with a Vegetable Peeler making very thin slices and Sprinkle over Salads, I do that a Lot, but my Favorite way of eating it is by cutting two long pieces like French Fried Potatoes and Pour a Little Good Orange Honey over the Cheese...so GOOD! That's how Italians eat it for Dessert, They might add some Sliced Truffles/ Fruit or some of that 100 Years Old Balsamic Vinegar!...I don't!
I had Eaten other Parmigiano Reggiano Cheeses that were Aged for longer than 18-20 months, with very hard texture and all the Crystallized little white specks that tastes like Candy! ...
This one from "Go Italy Gourmet" is Top Grade with an Excellent Taste. Another thing I really like about it, is that it doesn't have that much of that Thick Hard Rind so common of this type of Cheeses, Therefore, Not Much Waste! It arrived in Perfect Condition and in Time as Promised with Ice-Packs and Dry-Ice and a Note with Instructions from Francesco, Customer Service, I could tell they took good care of my Order, Thank You. I will Order again when ever I finish all 10 Pounds of this Wheel! ...That might take Awhile!

This is the best salame. I look forward to our trip to California every year for the fun and I know that there is always a log of this stuff at everyone of our family members house. Having travelled extensively in Italy, I had huge hopes for Columbus's Salame Secchi (Authentic Italian Recipe).Horribly overpriced, the many tiny rolls arrived at my house somewhat "mushy." It was excessively greasy with little or no taste. The casing (as mentioned in many reviews above) stuck to the actual product and was difficult to get off. I hung the rolls up in my kitchen to dry out and my cats weren't even interested enough to take a bite.
I served it at my daughter's catered graduation party with some inexpensive grocery store salami and guess which one disappeared while the Columbus Salame was barely touched. After the party, I did a taste comparison and the grocery store brand was "head and shoulders' above the Columbus product.
I don't understand how this company can stay in business. The product is horrible tasting and horribly priced. Even if it was cheaper than the grocery store brand, I would not buy it again.
I have to believe company representatives write the favorable reviews above.
