If you live in the States like I do, and you consider yourself a cheddar fan, you owe it to yourself to find this cheese and try it. It won't be in the same spot in the supermarket with all the plain American cheddar-type cheeses. You will find it near the deli/gourmet section. The first time I tried it, it was like I set foot into a new world for the first time. I never knew how good a cheese could be until I tried this cheddar. I wasn't expecting any kind of holy revelation, especially because in this country, cheddar tends to be regarded as a boring, bland cheese. But this is REAL cheddar, and what a huge differece that makes! You can tell that someone has put their heart and soul into the creation of this cheese. If any one cheese could be chosen to represent Earth in an intergalactic cheese expo, it should be this one.

Champagne Wine Vinegar 6.8ozI had heard that champagne vinegar was good from TV CHEFS and cooking magazines. I realize now just what I was missing. I highly recommend it. You won't be disappointed. A little goes a long way!

I really like this champagne vinegar. There is plenty of taste, but it's not overpowering. I have tried it on fish and vegetables and both were excellent. I also made a salad dressing with it that turned out REALLY good. I highly recommend.

Zinfandel Vinegar 6.8 ozO Zinfandel Vinegar is among the 13 specialty wine vinegars made by the California-based O Olive Oil company. I'm not a big vinegar fan, as vinegar in any but the smallest of doses makes me sick. But I keep some on hand to use sparingly in salad dressings. I tried O Zinfandel red wine vinegar a few years ago after it had placed first in America's Test Kitchen's Gourmet Red Wine Vinegar taste test. I've also seen Jacques Pepin use it on his cooking shows. It's a sweet vinegar, which Americans tend to prefer, very different from harsh super-acidic European vinegars. This is vinegar, though, so it's not sweet in the syrupy sense. It has a sharp, well-balanced flavor that is unusually rich by vinegar standards, with hints of cherry. This is how O Olive Oil describes it:

"Handmade in small batches in the Orleans method and aged in oak barrels for over two years. Smoky spice and voluptuous cherry notes emerge from old vine California grapes in this artisan vinegar."

The description of the flavor is about right, but it needn't be as pretentious as it sounds. Use O Zinfandel in anything that calls for red wine vinegar, or just drizzle it on greens or vegetables. It's especially good in dishes that contain onions, as it balances out the sharpness. In case you're wondering, the Orleans method of making vinegar was the first commercial method developed. A small amount of vinegar containing the mother bacteria is added to a cask of red wine. After a few months, the vinegar is moved to another barrel for aging. O Zinfandel is aged in oak barrels for 2 years, at which point bing cherry juice is added, before aging another 6 months. Ingredients are: aged zinfandel vinegar and bing cherries. Acidity is 6%, and it contains sulfites.

But honestly, I walk three blocks and buy it for just under $6 at Gourmet & More on Gough Street in San Francisco. I can't understand the price or paying the shipping. I'd buy a terrine or use a loaf pan and make it myself rather than pay these kinds of prices. There's a whole classic text on making terrines and pates at Terrines, Pates & Galantines (The Good Cook Techniques & Recipes Series) and you can watch Julia Child do it on The French Chef. It's as easy as making meatloaf.

Beyond that I'd go to the Fabrique Délices web site and see if you can buy it locally in your area.

I have never ordered anything such as this online. I was surprised that the nuts arrived in about half as much time as the site said it would take.
