Reserve Du Chateau 4 Week Wine Kit, Cabernet Sauvignon/Merlot, 20-Pound Box

Reserve Du Chateau 4 Week Wine Kit, Cabernet Sauvignon/Merlot, 20-Pound BoxLike the previous reviewer, I was amazed that you would get two complete wine kits in one package with corks, labels and chemicals. I did have a bit of a problem however because the bags were not clearly labeled. I contacted the maker and they were extremely friendly and helped me locate the name on the bags. (You almost need a magnifying glass to read them.) I am now to the bottling stage and the Cabernet is wonderful to my taste, as is the Merlot. I love a good dry red and both wines have a nice "bite" to them. I can only imagine what they will be like in 3 months, or 6 months (if I even have any left then). Do not hesitate to purchase this kit. I think you will not be disappointed.

When I found this reserved the Château four-week wine kit. I was very surprised that you received two complete kits and this one box for the price of one really. Both the Cabernet Sauvignon and Merlot wine kits were very easy to make ready for bottling six weeks. I use a pump to rack the wines into a carboy which I degas saves a step in another week. I was skeptical at first ordering the wine kit because the description is vague but the product is superb. I recommend this to anyone both novice and pro winemaker.

White Zinfandel (Vintner's Reserve)

White ZinfandelIf I could give this product a 10-star rating I certainly would. It was one of the first kits I made and I was completely impressed with the ease of the process and the resulting product. If you are looking for the typical "Blush" or rose colored White Zinfandel, this is not the one for you. It is a deeper red, closer to a regular Zinfandel. But if you want a wine that is exquisite, with a wonderful flavor, then do not hesitate. I have made two of these kits and will soon do a third as I am down to only 6 bottles. The first one was consumed very quickly as it was the only wine on the shelf, and it was very good. But the second kit has had a bit more time to mature and it is EXCELLENT.

The product description says to serve "well chilled" but I have found that the flavors come through much better if it is not too cold. We had it with Thanksgiving dinner last year and it was a wonderful complement to everything.

Do not hesitate to "attack" this kit with great enthusiasm. I think you will not be disappointed.

Salted Capers by La Nicchia from Pantelleria, Sicilia

Salted Capers by La Nicchia from Pantelleria, SiciliaForget all those briney jars sporting "NONPAREIL" on their labels. This is the real deal. From that hot volcanic rock off the coast of Sicily, Pantalleria, these are capers to provoke a caper of your own. I found them in Italy. Five stars for Pantalleria capers which go with caviar.

These are the most intensely flavored buds in the business. I use these salted capers in sauces including a lemon caper butter sauce for my veal. Using only the salt that clings to them, the sauce is stunning and different from sauce using other caper brands that are not Pantalleria or are stored in brine. Brine is the withering enemy; and additives other than salt distort the flavor. For most dishes, you will rinse away the salt, or save it, because whatever you made is already salted. But beware, you kill capers if you cook them. Just add the capers after you turn the heat off. The heat from a warm pan is plenty.

I'll admit, these are more expensive. You can get good capers in salt from elsewhere including some nice Spanish ones. I will use those more often. But for special service, I reach for these. Nice to have them available here.

But I think I like the ones in brine better. These were really salty even when I washed them twice. Won't buy again probably.

I use capers a lot and was looking for small salted capers for those dishes where the caper must be presented whole. These fit the bill perfectly providing perfect taste and size. Four stars only because of cost being a tad higher than need be.

Top quality Capers, best I have purchased, worth the price. Much better then what you'll even buy in the stores, and it has a long shelf life. Will be buying more.
