I was so pleased to find this delicious Shropshire Blue on Amazon. I first tasted it at traders Joes and then they stopped covering it. It really has so much depth and character. I ordered it with my favorite English Stilton and I have a hard time saying which one I like best.

I'm really enjoying these salts. Each kind comes in a small bag that's resealable (at least until the glue dries out), though if you don't close them just right you won't be able to close the lid again. A word of warning: these salts are STRONG. Use sparingly!

I like trying gourmet salts and this seemed a very reasonable price for 2 oz each of 4 salts, although one of them was regular "Pacific" sea salt so you only get to try 3 new ones. Save the Hawaiian coral salt for dishes where the color will show up, the flavor isn't noticeably different from regular salt. I love the subtle flavor nuances of grey salt, and this "Brittany Gray" is a nice one. Suitable for light-flavored dishes like eggs and many vegetables, but would be wasted in strong-flavored dishes. I have fallen in love with smoked salts, and the lovely aroma of this "Alder Smoked" salt permeated the other salts and my whole kitchen. The salts are packaged in little plastic bags that are somewhat resealable, but the seal loses its stickiness quickly so you will probably want to put the leftover salt in a different container. This would be a nice, inexpensive hostess or party gift to someone who enjoys cooking. If the 4th salt had been another flavored salt rather than plain sea salt, I would happily have awarded this 5 stars.

Purchased these for my Foody brother-in-law. He has been experimenting with them and thinks they are great. The salts do have distinct flavors. We also purchased the Clay Company 4 peppers, also excellent. If we did it again we'd probably look for grinders as it is inconvenient to switch out the peppers or salts when you want to use a particular one or want to mix a few of the peppers or a few of the salts.

Lalvin 71B-1122 YeastLalvin 71B-1122 is my yeast of choice for mead. It is delivering consistent, tasty results. I prefer my meads to be sweet and this yeast has never failed me. Other yeasts can give dryer results that are less desireable for meads (in my opinion).

One note of caution it does take a significant amount of time to finish. (I do not use yeast nutrients or energizers as I am brewing for a specific audience and prefer not to have modern ingredients in my mead.) That being said, I will continue to use it and be patient. Good mead is worth the wait!

This yeast works. It is the single most important item in my homemade wine recipes. It does the job. Nothing to whine about!

Bought some of this for my first batch of mead. Was no expiration date on the packaging, so I was a bit nervous, but it rehydrated nicely, and appears to be going well after 12 hrs.

Felt like I got took though, when I found the same product elsewhere for less than $!/pkg!! Amazon is usually a great price, but I didn't do my due diligence, and got bit for it. Live and learn.

The best yeast on the market. I use it for all my white/clear wines...Apple, Sassafras, Mead, etc..Goes to work fast..stays very aggressive and can reach over 17% ABV...No other reason to use any other yeast unless you are doing reds..

I use this yeast in all my fruit meads. The smoothness it produces and the large temp range it can be used in makes it my only choice. I did not like the results in a regular mead with no fruit. I do agree with other review it does take a long time to finish.

Savora 11 Spice French Condiment from AmoraI had never heard of this so I bought it because I like new stuff. It is a great sandwich spread; a bit spicy, but still smooth. I've been using it instead of Mayo and it works just fine. I'll try it on fish sometime as it seems to me to be sort of like a spicy tarter sauce. I like it and it is now a regular item in my pantry.

More on the sweet side. I do prefer AMORA dijon. That is the best. This is good though. Try it!

This has been my favorite mustard for the past 20 years. There simply is nothing like this product. It is outstanding on hamburgers, steaks, sandwiches...

There is a hint of mustard heat, but this is not a Dijon style mustard. Those 11 herbs blend together to soften and make the mustard much more complex. There's no sharp vinegar flavor like with prepared mustards (better known as French's).

It is simply heaven with a really nice steak. I love this product, only wish it came in much larger jars.

10 Packs of Lalvin Dried Wine Yeast EC 1118I have made about 12 batches of red wine with 8 grape varitals with Lalvin EC-1118 over the last year. Every batch has started quickley and fermented to completion with no problems. I do not sterilyze my equipment or use any chemicals. I start the must at about 75 degrees and let it find it's own temperature balance after that. This yeast is so vigorus that nothing strange seems to ever be able to get started. I scatter the yeast on the must as soon as I have in in the stainless soup kettle, let it float on top for 15 minutes and then stir it in. I always adjust my sugar for 15% alcohol. About brix 26. This will take awhile to complete fermentation. About 2-3 months due to the high sugar content, but the wine has all been great. So much better then any commercial wine I have tried that I no longer want to buy wine. I went to a wine tasting recently. These were $30-$40 dollar a bottle wines. They were so far inferior to what I make that they gaged me.

The EC-1118 strain was isolated, studied and selected from Champagne fermentations. Due to its competitive factor and ability to ferment equally well over a wide temperature range, the EC-1118 is one of the most widely used yeasts in the world.

Oenological properties and applications

The fermentation characteristics of the EC-1118 -extremely low production of foam, volatile acid and hydrogen sulfide (H2S) -make this strain an excellent choice. This strain ferments well over a very wide temperature range, from 10° to 30°C (50° to 86°F) and demonstrates high osmotic and alcohol tolerance. Good flocculation with compact lees and a relatively neutral flavor and aroma contribution are also properties of the EC-1118.

The EC-1118 strain is recommended for all types of wines, including sparkling, and late harvest wines and cider. It may also be used to restart stuck fermentations.

An excellent choice for champagnes and late harvest wines. Also a very good choice for dry whites.

I use this champagne yeast to make apple cider simply add one packet of EC-1118 to 5 gallons on apple juice (no preservatives) and in 3 weeks you will have hard apple cider at about 5% alcohol. This yeast flocculates well and the cider is nice a clear. rack of the liquid add another 1/2 gallon of apple juice and bottle. The cider self carbonates and is ready in about 3 more weeks.

My favorite mead yeast... starts fast, and ferments quickly. Very flavor-neutral... doesn't seem to add discernable taste characteristics to the finished product. If you've been using other champaigne yeasts, try this one, you won't be disappointed!

Duck fat is an underappreciated cooking fat. Most people tend to shy away from animal fats when cooking, but due to a good balance of Omega-3 and Omega-6 fatty acids and a low glycemic load, duck fat is surprisingly not bad for you. When compared to other cooking oils like peanut or canola oils, duck fat is a much healthier option. You can use it for every day cooking just as you would use butter or any other oil. While some may be put off by the price, remember you can reuse it, and it's much healthier than a lot of cooking oils.

It's semi-dry and very smooth. I believe it of a higher quality than the vino italiano brands on amazon. It's worth the extra 10 bucks or so for sure.

This kit is probably the best of the Reserve series. It's easy to produce an excellent red, with the softness of Merlot and the slight acidity of the Cabernet.

I used this kit to make 4 gallons of port. It came out very well. It certainly took longer than the 4 weeks claimed by the kit, but then I made my own directions. I will recount my method in case anyone wants to try their hand at it. Here's what i did:

I chose this kit because it had made five gallons of decent wine for me in the past. The blend had a good balance, but even at 5 gallons was a bit thin.

I reserved one and one-half cups of concentrate and froze it. I used the remaining to make 4 gallons of must and fermented it with the yeast provided.

About a month in, I added 1/4 gallon of simple syrup and some yeast nutrient.

Two months in, I racked to a three gallon glass carboy and a one gallon jug, topped with simple syrup and air-locked them for another 2 months.

I racked them back into a 5 gallon carboy and added the correct amount of cognac, using Pearson's square. I let it sit until I was certain fermentation was done.

I stabilized the wine and degassed it and added in the thawed, room temp concentrate that I kept from the first and added medium toast french oak chips and rested the wine for another two months.

At bottling I racked the wine from the sediment, but did not filter it as I usually do with regular wine. I wanted any oak residue to remain in the bottle and settle out over time.

I was rewarded with a very good port that I expect to age very well. I will do this again in about 3 years.

I saved money over using a port kit and got four gallons instead of three which port kits usually yield. It did take a very long time to make compared to a port kit, but with port, there is no need to hurry. I won't even open the first bottle for at least a year.What would I do different? I would splurge and buy a higher end cognac. I could afford it for what I saved. I would probably also use a higher quality cork, only because I plan to still be drinking this 6 or 7 years out. The included corks would have been just fine if i used the kit for basic table wine, as I doubt it would remain in the cellar more than a year. I will also like use a port yeast since I know this experiment worked out very well. I'm still money ahead.

I make about 75 gallons of wine a year. Some from kits, some from fresh grapes and some from stuff you wouldn't think would make a good wine (cucumbers, beets, rhubarb, all make good wine, but take about 12 months from must to bottle. Most of my wine is given to friends and those people who have been kind enough to supply me with fresh grapes, cucumbers, rhubarb and beets.

Ports, ice wines and sherries stay with me and cellar.

Have fun. This is a great hobby. The price of these kits makes them attractive to do odd things with, for instance I blended a Moscato kit with some of the cucumber wine and it was really tasty. I don't think I would have played around like that with a hundred dollar kit.

Product came in 2 days. Instructions a little vague but in 4 weeks it was ready to bottle. No filtering needed at bottling time. I have purchased 5 wine kits and the wine has always been great after it has rested for several months.

I have made a Shiraz from another brand kit and it was decent after a year of cellering. This wine is far better after just the 2nd racking. Much more flavor and already smooth but with a nice acidity. I am thinking after maturing for 6 12 months this will be a wine to be proud of. We will see if I can make it that long without drinking them all. The labels, wrapper caps and corks are a bonus. I have paid more for kits with far less that were not even in the same ballpark. I made this into a 5 gallon kit.
