I purchased the Alessi white balsamic vinegar after eating a salad at a restaurant that was simply romaine, Gorgonzola, candied walnuts and white balsamic vinegar drizzled on top. The restaurant's white balsamic vinegar was sweet. The Alessi white balsamic vinegar was not sweet and tasted like apple cider vinegar. I shall need to try a different brand to find the flavor I am looking for.

I sampled a bottle the other day and it was good, a little more age and would be very good. I'm guessing 4 to 6 months aging in the bottle would be adequate. I did give it one more racking than what the instructions called for and it was adequately clear. Did not filter. I will be trying other Chateau Classico kits in the future.

Purchased this kit when it went on sale for $30. It didn't work out as the wine stopped fermenting before it finished. Maybe that is why they had it on sale??? Followed directions exactly and had all the appropriate tools / kept everything clean and sanitary.

Vino Italiano 4 Week Wine Kit, Chardonnay, 15.5-Pound BoxI was pleasantly surprised by this kit.. I made it to the directions, but added 2 oak spirals (purchased seperately) during fermentation. For some reason, this wine took more time to ferment than the directions stated, which is why I always go by hydrometer readings and not the "guidelines" in the directions. This posed no problem for me as it gave the wine longer to extract flavor from the oak.. My kit took just over 6 weeks from yeast pitch to bottle. Fermentation alone took 4 weeks. This is also the only kit I ever made using tap water, so that "may" have affected fermentation..

All in all, this wine is a winner to me, and everyone who has tried it has given it a thumbs up. The oak gave it the soft buttery and vanilla flavors which I have always loved in a Chard.. If you are not a fan of oaky Chards, and decide to make this, please post your results without using oak. I am interested to see if the oak added significantly more character to this wine or not. For the money, I think this is a steal!! Especially since it comes with corks, shrink capsules and labels!!!

I will definatley be ordering this kit regularly, and already have orders for more bottles!!

I also modified the kit instructions. I hydrated the yeast, however, the instructions said that you could do this as an alternative to using the yeast sprinkling method. My SG at start was 1.08. The first fermentation ended on day 11. After racking, I added toasted oak chips. I racked the wine again on Day 21 when the SG was .990, and again on Day 23 due to the amount of ugly sediment that was forming quickly at the bottom (and I was going on a business trip). The wine at this point was extremely cloudy, and tasted and smelled horrible. The alcohol tasted very strong and I thought that the alcohol content was way too high. I then removed the oak chips and added the gels. The wine cleared within a couple of days and seemed to darken a bit over the next week. I racked the wine again on Day 33, crossed my fingers and tasted the wine. I was shocked that it tasted good but I wish that it had more body and had more oak flavor and had more body. I have not bottled the wine yet but am thinking of adding more oak and bulk aging the wine a bit longer. Note that I am probably at 20 liters but I am not adding water or wine, but am spraying inert gas (Wine Preserve) into the carboy whenever I lift the airlock.

I like a very oak flavored Chardonnay and this kit contains no oak. That is the only reason that I am ranking this kit as a 4 star instead of a 5. I hope that Amazon continues to sell Vino Italiano kits. I would to try out the red and see how they compare to the much more expensive Vino del Vido and Mosti Mondial red wines that I have made.

Based on my results thus far, I would recommend this kit. I will add more information to this review if I am able to later.

Update June, 2011: Just opened one of my last bottles. It keeps getting better. Very smooth, very good flavor. I am ordering another kit.

This kit makes a very nice chardonnay with some adjustments. First, be careful and use a hydrometer when you make up the wine to volume. My kit made 20.5 Liters at 1.090 instead of 23. In fairness, the kit says it makes 23 L at 1.075 to 1.090. I opted for reduced volume in lieu of diluted wine.

Secondly, the kit does not contain yeast starter nutrients and the kit instructions have you just sprinkle the dry yeast into the wine must. That's really not a good idea! I bought some GoFerm for rehydrating the yeast and some Fermaid K yeast nutrient to add during the fermentation. Rehydrated the yeast by sprinkling it into 6 grams of GoFerm suspended in 4 oz of water. After 30 min, I added 4 oz of white grape juice (no preservatives) to let the yeast start their metabolism. After 6 hours, I added another 8 oz of grape juice and let the yeast grow overnight. Used this starter culture to innoculate the wine kit must. Added 3 grams of Fermaid K nutrient on the first day after pitching the yeast and 3 more grams when the must had fermented down to about 1.060 specific gravity.

With those modifications and with some attention to the details of aeration and stirring, the kit makes a very good chardonnay. I'll give it 4 stars because the quality of components makes such good wine. However, if you just follow the kit instructions and sprinkle the dry yeast directly into the fermentation vessel, you run the risk of a very slow start and increased risk of contamination. If you don't add any yeast nutrients, you risk having stalled fermentation somewhere along the way. The yeast nutrients are cheap; they should be in the kit!

First, a disclaimer for those looking at wine kits who aren't familiar with them; this is *not* absolutely everything you will need to make wine kit, but it does have just about all of the disposable items you'll need other than bottles. If you don't own any wine making equipment, you will want to get a fermenter, a carboy and... well, you'll need to get a STARTER kit. This has just about everything someone who has already been making wine will need, except for the bottles... and if you're like me you'll just save your bottles anyway to sanitize and reuse them.

That said, wow. It did have everything I needed. It included the corks I'd need for my bottles, the Chardonnay bottle labels as well as a bottle sealer that I found extremely cool but had not used before. The yeast (Lalvin-1118) is my go-to yeast when I make mead or hard cider and it worked well here. It will tend to leave a dry wine, but then you can backsweeten it if you want... but with a chardonnay, you'll probably want to leave it dry. I used the same fermenter, carboy, tubing, etc. that I use whenever I make my adult beverages, but the kit completely covered me for all of the "consumables" that I would otherwise have possibly bought, even including some clarifiers I hadn't used before but I will be using again.

I ordered this back in September in order to make this batch for some chardonnay lovers in my family for Christmas and I did the final bottling yesterday... I am not a big chardonnay fan personally (I like sweeter wines myself) but even I enjoyed the final product. The only thing I added which was not in the kit was oak chips (available here or at your local brewing supply store) to give it an oak flavor, but that's certainly not necessary.

This is my first Vino Italiano kit -as I said above, I normally make mead or hard cider so I don't have a lot of experience with wine kits, but I will definitely be trying other Vino Italiano varieties for some of the sweeter wines that I do like... Yes, most kits cost more, but this is a case where I feel like I'm getting more than I paid for. Highly recommended for fans of chardonnay who already have a wine making starter kit and 30 or so 750ml wine bottles they can use. :)

This is my 9th kit of Vino Italiano Wine.I make it to 6 gal. and add 3 cups of simple syrup, (just heat water and add sugar)at the beginning fermentation. This will make the wines abv about 12% .Each pound of sugar raises the abv about 1%. Make sure to use quality water like bottled spring water,not tap or well water. I also added 2 cans of white grape juice for extra body,The directions are easy to follow..It also gets a little better after being in the bottle for a month or two.The Vino Italiano wines at amazon are very good too for a regular non fruit wine.Great value with corks and labels and hats.I also don't put labels on all the bottles unless i'm giving them away,too much work to clean them off next time,just use a little adhesive tag to label them.I highly recommend these wines,and its fun to experiment with different techniques that you read other people tried. Enjoy, but remember,its addictive.

Keep in mind that this is a value priced wine kit and can't be compared to a primium 16 liter wine kit. But I am very happy with the results. This is a refreshing, fruity, dry, white wine. I made it a 5 gallon kit instead of the 6 gallons per the instructions and have found this kit to have surprisingly great flavor. These Vino Italiano kits are better than two buck chuck and they are fun to make. I used to drink Trader Joes wines in the $5-$7 range for everyday enjoyment. I think the Vino Italiano wines are better than what I had been drinking. Adjust your expectations and you will be very happy with the results.

I'm a value shopper at heart so in all honesty I bought this wine kit primarily based on price. I figured $41.35 shipped for a kit that includes everything I needed except bottles was worth trying out. I've made some of the premium kits from other companies in the past, and I wasn't expecting anything great from this kit, but hoping for a drinkable wine. However, I've been pleasantly surprised with the quality of the finished product. My wine has been bottled and aged for 3 months now and the flavor is very good and getting better. Crisp with hints of apples and peaches, no unpleasant or bitter aftertaste. I'll let it age a few more months before sampling again. Granted the kits that cost 2 to 3 times more do make a better wine, but the difference isn't what the price would indicate. This kit will make a decent wine, comparable to a bottle you could buy in a store for about $8.

Previous reviewers have indicated that if you make it to 6 gallons the wine will be a little weak and thin in flavor. I believe this would be correct. I was aiming for a specific gravity of 1.090 to start, and I got that with a little over 5 gallons volume. What I did was add 2 cans of frozen concentrate white grape juice and brought the total volume to 6 gallons, which gave me a starting gravity of 1.092. Fermentation took longer than indicated in the kit instructions, probably because the juice concentrate I added isn't intended for fermentation purposes and contained sorbate as a preservative. To help counteract any problems from this I made a yeast starter 24 hours in advance to pitching the yeast and had it bubbling good when I pitched it.

The finished wine was fairly dry; my wife and I prefer just a hint of sweetness in a riesling so I added some additional sorbate and sweetened a bit just before bottling. It was a little harsh when bottled but that's normal. and has improved significantly after 3 months. I expect it to be even better after 6 months. Adding some metabisulphite when bottling provides increased protection for longer aging, I did that and will let half the batch age at least a year. We're very pleased with the results. The next time I make this kit I will consider adding some golden raisins to the primary fermtation, I think this would increase body and result in an even better wine. Mostly what I make are fruit or floral wines from scratch, but I will purchase additional Vino Italiano kits in the future of various types for my grape wines. I've rated this kit 5 stars because it yields a good wine for an excellent value.

Let me start by saying I'm reviewing this based on what it is...a bargain priced kit. It's not really fair to compare it to a $120 premium kit. With that said, I found it to be a solid product with nice flavor.

Based on other reviews on Amazon and forums I knew that I shouldn't make this kit to the full 6 gallons or it would be weak and lack body. I only made it to 5 gallons, but I would recommend you make it based on specific gravity rather than volume, because mine came out a little strong. Mine came out to about 13% ABV. On a Cabernet or a more full-bodied wine that would be okay, but it's a little strong for a Riesling. They give you the recommended starting SG, so I would shoot for the middle of that, rather than filling to volume, but probably about 5 1/2 gallons is where you want to be. That will allow you to leave the sediment behind and still fill up a 5 gallon carboy. If you have left over, then keep it in a one gallon jug/carboy and use to top up later in the process.

The flavor is still excellent and very drinkable. It was a dry kit, so I sweetened with 1 1/4 cups of wine conditioner. I added a little sorbate after clarifying and before adding the sweetner to avoid fermentation kicking off again. Give it a few days between adding the sorbate and sweetening to make sure fermentation is completely killed off. It's still not very sweet, so I would recommend 1 1/2 cups conditioner/sweetner to get closer to a Washington style Riesling.

Overall I think the kit is a true bargain, especially with free super saver shipping. I've since ordered the Shiraz and so far it is exceeding expectations as well.

I still have this batch "in the works" but so far it looks to be one of the best batches I have ever made. I did two modifications: I added one Granny Smith apple plus two pears (minus the peels) to the batch when I started it, and then I also stopped the fermentation when the SG was at 1.02 as the alcohol was at 14% and this left a residual sugar in it which is leaving it sweeter (used crushed Campden tablets to stop the fermentation)(I also made it about 5 1/2 gallons as opposed to 6). I am about 1 week from bottling but so far the flavor is awesome distinct fruit flavors, cross between semi-sweet and semi-dry; very tasty. I also made a Chardonnay which also came out well, and am getting ready to order two more Vino Italiano kits. These are the best deals on the market when the free shipping is included. Highly recommend!

I've made several of the Vino Italiano kits and have been happy with all of them.

I even shared a bottle with my wine-snob sister and she was quite impressed. (gosh, I hope she never reads this!) Impressed enough to consider wine making as a hobby!

The instructions for the kit are nearly identical to those of the the more expensive kits you'll find at your local home brewing / wine making store.

That said, I must say that the instructions would probably not be adequate for a first-timer (neither are those of the $100+ kits!). Beginners simply won't understand the sanitation requirements or how to use the tools... that's when the advise of a local merchant would probably come in handy, though there are certainly enough videos and websites out there to cover the basics. I still can't help but feel the kit manufacturers should have links to their own material.

If you've ever successfully made wine from a kit, then you'll have no trouble with this one. It's just less expensive!

The fact that these low-priced kits come complete with corks, labels and heat-shrink capsules, just adds more value.

I've made both kit wines and country wines and have enough experience under my belt to "play around" with the kits now. The Riesling was made according to instructions with the only variation being the length of time for each stage. Not for any reason other than my own convenience (I waited longer between racking and bottling). Comparing the results to a Vintners Reserve kit that a friend made at the same time... The Vino Italiano kit was BETTER. Just my opinion, of course... I did a blind taste test, so it was impartial. But then taste is a matter of personal preference, I'm not a wine judge.

I've got two different VI reds fermenting right now, slightly different variations to the instructions. Will post reviews on those when they're properly done.

Champagne vinegar is another hard to find item and I do love it in a homemade vinaigrette. You can't just go to your local grocer and pick it up off the shelve. I like the size also 25oz is a good amount to have on hand and the price to me seemed reasonable. Being older and retired I don't have the ability or energy to search the greater metro area looking for hard to find products. It's an excellent product and I'm enjoying it a lot.
