Bought this as office holiday presents, and it was very well received. This nougat is very fresh, soft, tasty. It is sweet, but not too sweet. Has a wonderful texture. Having read reviews about this wine-kit company's wines being "watery" I decided to make 5 gallons instead of 6. Later, I read that this can be VERY tricky with kits because they are specifically tailored for that particular volume of wine. Maybe I got lucky, but our batch came out pretty good. I also added some extra tannin, a little citric acid and I soaked some oak chips in it during the final phase. I was careful to keep everything sterile (with the sterilizer that came with my equipment packagenever use bleach or other household chemicals on wine equipment) and I also paid attention to the fermentation temperature, having read that two of the most important things in home winemaking are sterilization and temperature.
I just bottled 23 bottles of this wine a couple of days ago and we drank the 1/2 bottle that was left over. It tastes like an inexpensive table wine you'd get in a restaurant in Italy or France. Nothing special, so far. However, I've read that even a few months of aging in the bottle can do wonders for these kit wines so I'm eager to see how it tastes later this year. As of bottling it was clear (no haze) and had a nice, light raspberry color to it. It was semi-dry with lots of fruit undertones; decent legs and an okay nose. There was a faint hint of oak, probably from the chips, which soaked in the carboy for about 5 days before bottling.
All-in-all, I've paid more for wine that wasn't as good. I've already started my second batch (a Vinter's Reserve kit purchased locally) and today I started a small batch made from organic grape juice purchased at the grocery store (we'll see what happens there).
Warning, wine making can become addictiveit's one part science, one part art. I'd recommend this kit to a beginner who doesn't want to invest the $100 in a higher-end kit. Good luck!If the wines are a little watery just make 5 gallon instead of 6, you will be plesantly suprised in the difference. Because, corks, labels, shipping is all free it's still around $2.00 per bottle. I always keep extra yeast in the refrigerator so if the date is expired I just grab 1 of them. I am rather impressed with the Vino Italiano brand.

I have had several of these kits, and mostly they come out pretty thin. It has been suggested to cut back to 5 gallons. This still leaves a wine that is thin and lacks any acceptable mouth-feel. Here's how I do it with a red wine kit.White wines are treated the same only I make them to the 5 gallons, not 4; still reserving some juice concentrate.
1. Pour off 1 1/2 cups of concentrate into a sterile Ball jar. Place this in the freezer.
2. Make the remainder up to 4 gallons. Do primary fermentation.
3. From primary, rack to secondary (for me that is a 3 gallon carboy and a one gallon jug) Top up with simple syrup (2 parts sugar to one part water OR up to 1/2 of your retained juice) This is where I would also add in the oak chips if I am using them.
4. This will not finish fermenting in the 4-6 week time frame. More like 8 to 16. I rack again at about 4 to 5 weeks.Clear, stablize and de-gas.
5. At bottling time (here is were I filter w my mini Boun-Vino)
6. Add 1/4 teaspoon Potassium Sorbate.
7. Pour the retained juice that has been thawed to room temp into the filtered wine before bottling.
Yes, I know. 4 gallons from a 6 gallon kit. But believe me, it is worth the loss.
This 4 gallon volume is still a great bargain, especially if you have an Amazon Prime membership to cut the shipping costs. It comes out so well that I have put this item on subscription to save even more.
Considering the fact that you get both corks and shrink cap (and labels, I suppose, I like to design my own) Even 4 is gallons cheaper (bottle for bottle) than a premium kit.
All that being said, it is still a kit with kit quality. Don't expect a great wine to come from this. But follow my method and you'll have a wine you would be proud to serve your friends.
(An additional note: I've also done this with Amazon's Reserve du Chateau kits, but adjusting the primary fermentation to 5 gallons because of the extra 3 pounds of juice in the kit. This comes out very well).

I was very satisfied with this kit. I have made about 5 batches since the first try. Its very important to remember that young wine is not super tasty. Within 6 months of bottling the product is excellent and so far just keeps getting more tasty as it stabilizes. I liked the wine overall, so does my gf so that helps too. I thought it was a bit bubbly but maybe I didnt stir out the bubbles enough. Decent body and is definatly worth the money you pay for it and the lables are very good. It makes a decent wine, this is made to drink when the wine is young, while the wine is just OK at a young stage, it says aging will cause it to lose the fruity taste but since it makes about 30 bottles I think there will be quite a few that will be left to age. I have made wine before and it has turned out well and tasted good after aging. This kit has the ingredients necessary to make the wine but you do need to have your own fermenting container, carboy, the air locks, bottles and things like that. With these wine kits you often get told to put Keilesol and Chitosan to clarify the wine...those packets are in the kits. My wife, since I started making wine from kits, has been saying there is a chemical under taste that is not appealing. She has a very sensitive taste capability well beyond me, but even I noticed it.SO.....
First I added 24 ounces of Karo syrup to boost the alcohol content (to the must), then I followed directions right up to adding the sweetened flavoring. (potassium sorbate, etc was put in...). I only added about 2/3 of the sweet flavoring bag, otherwise it would have been too sweet. Then I stirred well...then I did....nothing....
I let it settle for a week then carted it over to another carboy again, leaving the dregs behind. A week later I filtered it through the small filter system (Vinbrite....works well but you have to rig the bottom plumbing a little) and the wine was....EXCELLENT.
If this doesn't work for you...sorry. However, my 2+ cases were immediately wiped out by friends and family after they tasted it. So now I get to do it again and this time I will shut up once the batch is complete!

Here's the secret: SAF-Instant Yeast! A 16-ounce will last for all the home baking most people will do for months, or perhaps years. It is supposed to last one year, but it can easily last 5-10 years, according to a number of sources. It is to be stored in a cool dry place.
SAF Instant Yeast is a powerful and fast-acting yeast. It can be added to dry ingredients directly. It is twice as active as regular compressed yeast.If you love using your bread machine and want a reliable yeast that does not need to be proofed (can't remember the last time I did that), then this yeast will make your life much easier. While this is not a rapid yeast, the bread does seem to rise more quickly than with packets of yeast from the grocery store. This saves time and gives you an empowered feeling instead of the "Is this going to rise or not?" feeling.
The yeast can be stored in the refrigerator or freezer and is very convenient to use. Unlike the yeast cakes, you don't have to worry about mixing it with water or milk. You just measure it into the bread machine.
Here is the recipe I love making for Focaccia bread. It turns out wonderful and you can start it in the bread machine or make it by hand. We serve this in slices or squares topped with butter and fresh rosemary or an herbed cream cheese. Perfect with homemade soup in the winter.
Focaccia for the Bread Machine (start in machine, finish by hand)
2 1/2 cups water
2 tablespoons Saf instant yeast
2 tablespoons sugar
2 teaspoons freshly crushed sea salt
2 tablespoons olive oil
6 cups all-purpose flour (the Baker's Catalogue sells an amazing flour)
Measure the water, yeast, sugar, salt, olive oil and flour into the bread pan. Program for white bread, dough cycle and large loaf. After the dough has been kneaded, you can put it in a large stainless bowl and cover the dough with a damp cloth. I normally forget it is in there and catch it just before it is about to rise over the top of the pan, so it still works, either way. You could also use half the ingredients for just one loaf if you want to let it rise in the bread machine
pan.
Let it rise until double in a warm place. My secret it to turn the oven on and then almost immediately off (just leave it on until you feel some heat on your hand) and this seems to create a "just warm enough" environment for bread to rise. Punch down and divide into thirds. Roll out two squares and one elongated loaf. This works well on the regular size cookie sheets. If you have a larger cookie sheet, you can roll the dough into two 8-inch squares.
Make deep indents with the end of the rolling pin handle at regular intervals. Then brush with olive oil. Let the bread rise until almost doubled.
Either sprinkle with sea salt or sprinkle with dried or fresh rosemary and sea salt. You can also top the dough with tomato slices, onion slices and sliced and pitted Kalamata olives before baking.
Bake at 400 degrees for 30 minutes.
After the bread cools, it will slice easily and it freezes very well. I normally slice two loaves and cut one into squares for sandwiches.
To make an Herbed Cream Cheese: Blend together 1/3 cup butter, 1 (8-ounce) package cream cheese, 2 teaspoons dried parsley, 2 teaspoons dried rosemary and 1 teaspoon dried thyme.
The idea for this bread came to me after visiting a sandwich shop at a garden center in Seattle. After arriving home from visiting my grandmother, I knew I had to try to make the cream cheese and the bread because they were perfect to serve with homemade soup.
This bread has a lot of possibilities so you can vary the toppings to suit the types of soups you are serving.
The Instant yeast always works and with a bread machine, you end up feeling like a professional baker. The results are sure to impress. The bread always has a "fresh from the bakery" taste unlike the taste of breads made with packets of yeast.

I run my automatic bread maker at least twice a week, so I go through a lot of yeast. I measure out my own dry bread mix according to a couple of recipies and store it in the freezer. I mix five batches at a time. To start the machine on any given day, I just reach for a single-batch container.When I am putting up the dry mix, I am committed. I have to be sure I have enough of each ingredient to start with. Having a pound of Saf Instant Yeast on hand saves me from running to the store for the little 4 oz. jars or fiddling with teensy-weensy foil packets, which are just the wrong size. I store the instant yeast in the freezer, too, by the way.
I don't worry about ingredients much. I add a tablespoon of vital gluten to each batch to make up for any deficiency in the flour. However, there is one ingredient that has to be perfect: the yeast. I have used SAF yeast before-had it in the freezer for over 3 years without a problem. I ordered this yeast 6 weeks ago from Amazon, put it in an airtight container, and refrigerated it. It worked great-was using it to make a loaf of bread one at a time (not a new recipe) over past 12 hours and none of them rose. I decided to proof the yeast and it was dead. I then checked the packaging which I had saved from the original container and there was NO date next to "Best if used by". Now, I am going to a Christmas party to which I was going to bring homemade bread, and its too late to make a fourth loaf. Please, check for dates when receiving this product. This is my absolute favorite yeast. Someone (and for the life of me, I can't remember if it was Alton Brown or America's Test Kitchen) measured the packet yeasts and found them to be wildly inconsistent significantly over or under the stated amount. Maybe that explains some of my past issues with raised breads, but since I started using the SAF yeast, it's been absolutely perfect. Great in a bread machine, no proofing required, and I always get a consistent rise. I've used the bulk Red Star Active Rise as well and didn't like it at all I just didn't feel it was as consistent. The SAF never makes me wonder if it's getting old or losing it's potency it just works.I tend to bake in phases, so I also appreciate the shelf (or in my case, freezer) life. I usually keep a small container in the refrigerator and the rest bagged up in the deep freeze. I even found some at the back of the freezer that was about three years old and it still worked perfectly. I have *never* had this stuff fail on me.
Since I'm not that serious of a baker, I can't compare Instant Yeast to Cake Yeast or other exotics, but for the bread machine and everyday bakers, this is the best I've found.

I discovered this grape juice in Napa while pregnant. Now I buy it in bulk (to help with shipping) to take with me to Holiday parties. I also bring it when we are at nice restaurants and have the waiter put it in a wine glass. All the restaurants have been accommodating so far! The Pinot Noir is the best, then Chardonnay, the Rose is okay. I like it because it is not super sweet.I tried (nearly) all the non-alcoholic wine, they were terrible. I recently ordered this product through a sample sale site and wasn't expecting anything hot, just wanted to try it. Well, I was extremely impressed with the flavor, there's no sugary after taste whatsoever. I've tried other sparkling grape juice products from the grocery store--they're full of sugar and have an after taste. This stuff is the complete opposite and still tastes great. It doesn't have as strong a burn as soda, either; it's got the right amount of fizz. I received 4 25 oz. bottles (2 each) of the California Brut and Pinot Noir, so I can't speak on the other flavors, but these two are really delicious and did not last long in my house. PS I like the Dark roast the bestI purchased this for my parents as a xmas present. Since our visit to Hawaii they are in love with Kona coffee and say that no other coffee compares. Unfortunately it is rare to find 100% Kona coffee on the main land. You mostly find Kona "blend". This item was a little expensive for the small amount but my parents have been raving about grinding fresh Kona coffee every morning (on their little island in Michigan!) so it seems to be worth the price.

I've been buying fresh beans for a few years now and can tell when beans are getting stale and these were not roasted in the time frame as advertised, it even had the date printed on the bottom when it was roasted and it was several weeks old.I would not recommed this product.
